I generally use MRH's recipe/proportions

I also add usually add ginger, sometimes astragulus or echinacea. I've never added cloves and can see how they would taste really strong! The honey is an added benefit, but you're still getting all the herbal goodness without it. Most recipes say you can sub maple syrup for vegan/babies and you can also add sugar and cook for a true, thicker syrup.
