Yummy Fish Tacos
We love fish tacos, which we were introduced to when we lived in Southern California, but which you cannot get where we now live.
So I made up this recipe to approximate a good SoCal fish taco:
Make Sauce--you could make this ahead:
1 part sour cream
1 part mayo
chipotle sauce to taste
Assemble the things for the taco:
Cabbage sliced thin (makes the taco refreshing and crunchy)
Chopped tomato
Sliced avocado
lots of cilantro
quartered limes
salsa or pico de gallo
Last two steps:
--Grill or broil some fish (tilapia or cod, for example)
--pan fry corn tortillas in a little butter to warm them and cook them just a bit.
Everyone assembles their own tacos.
My middle son and his girlfriend came over for dinner last night, and with short notice this is what I made. They loved it!!
