Aloe was my first thought, too. They are super forgiving if you forget to water them, too.
Lavender usually takes a couple of years before it will flower. I've grown it in my garden, but I've had to buy plants. I've not had success growing it from seed.
Hot peppers can be used to make muscle rub. (Soak them in alcohol for a few weeks and it extracts the capsaicin. Strain that and you can use it as is or add it to lotions.) Super easy to grow, but don't put them next to your tomatoes, or the tomatoes will be spicy. (Ask me how I know that!

Echinacea is easy to grow, but you need time to process it. I grew stevia once a long time ago, too.
