It was a win tonight.
1 stick of butter
1 onion
1-2 ribs of celery
Chop veggies, and saute veggies in butter in the soup pot, then add

4 cups of water
8 potatoes, cut and cubed
1 chopped carrot
(Dill)
Bring to a boil, then simmer until potatoes are soft, then add
2-3 cups of cheddar cheese, shredded, cubed, whatever
Stir until the cheese is melted
(At this point, we also added 1.5lbs of cooked ground beef)
Whisk together
2 c milk
3.5 Tbs flour
Add and stir for 5 minutes or until soup thickens.
