My go-to dinner in hot weather is a Muffaleta. (Basically a big pressed sandwich with olives. The original New Orleans olive salad is crunchy with celery and cauliflower, slightly spicy, with two kinds of olives, but I use homemade tapenade. I use whatever deli meats we have as well which is usually turkey or chicken; my kids can't eat mortadella which is traditional on the sandwich and I don't eat most of the pork-based meats.
Other meals:
any kind of dinner salad - Nicoise, Cobb, Taco
tuna melts in the toaster oven
I like gazpacho and cucumber soup, but the kids don't
