You might be able to put chopped chard in as a sub for the spinach. Your picky eater could pick out the parts she doesn't like!

Which would be the meat. DH doesn't eat spinach cooked either...only raw.

I went with one onion diced; two small grated carrots, 1/2 cup or so ground oats, 1 egg, garlic, Montreal. It looks pretty good...and it definitely increased the mass of the thing!
