Cut up some chicken breasts and spread them on a jelly roll pan with veggies (carrots, peas, onions, broccoli, sweet potatoes etc.). Drizzle everything with olive oil and then sprinkle with salt and seasonings. Roast at 400 degrees for 20 minutes. Serve alone or over spinach.
