Only a few types of lentils hold their shape. I think French lentils do. Most get mushy.

Late to this question but LCMS doesn't do any meat-free or fasting days at all, officially. I grew up LCMS and Friday fish fries were part of local culture but not required or encouraged by the denomination. Some may choose forms of fasting or abstaining during Lent but it's not required.
