I'm a big believer in smoothies. You can get a lot of nut butters and coconut oil into smoothies for staying power. You can put coconut oil on lots of things. If she'll dip her snacks, that helps, too. Graham crackers, for instance, are high in carbs but if you can make a nut-butter-based dip she'll eat, that can help.
I wouldn't worry too much about the actual glycemic index since a lot of it is old science and not done very well, but the concept of adding fat and protein to everything (and avoiding a lot of simple sugars) will help keep her sugars stable.
I think Rene's idea of checking her sugars and getting medical attention is good, too.
