Well, this is going to be a little complicated.
I originally made the recipe with Arrowhead 1 to 1 flour a few weeks ago and really liked it. Last night, I didn't have enough of that flour but I had the building blocks for the
gum free flour blend if you scroll down on this website. She only gives measurements in percentages. So I estimated the amounts to be 2/3 cup of white rice flour, scant 1/4 cup potato starch, scant 6 tsp tapioca starch. You would have to at least triple it to make enough for the pizza dough recipe. Or you could buy a one to one flour that you like.
Then I used this
pizza dough recipe although I don't have the fancy shmancy pan they talk about so my crust didn't come out crisp and browned like the pic. The crust didn't roll out. I patted it piece by piece onto my pizza pan. I pre-baked the crust for about 10 mins in a 400 degree oven before adding any toppings. Then because I baked two large pizzas, I bake them for 10 mins and then switch racks in oven and bake for 8 mins more. I would say the crust is kind of like a dense biscuit texture. But it is much more palatable than any I've eaten so far.
