I am keeping 660 Curries by Raghavan Iyer checked out nonstop! You name it, there's a recipe that calls for it in this wonderful book. And you don't have to have an elaborate kitchen or access to an ethnic market or high-end grocery to cook most of them, either. A lot of them are easy on the budget--there's one for turnips and kidney beans, many that use homemade fresh cheese as the main protein--WIC mamas elbow-deep in milk, take note! Also lots of different veggie side dishes for those weeks when your budget will only allow for one vegetable, day after day, because it's the one on sale. I'm slowly copying out the recipes that fit our budget and we'll see how many make it into rotation.
