Roasted acorn squash and cauliflower pasta
This was tonight's dinner:
half head of cauliflower separated into flowerets and roasted
half an acorn squash pealed, cubed and roasted
5 garlic cloves roasted
tossed with quinoa pasta, red pepper flakes and fennel seeds.
I also added in some chicken sausage and parmesan cheese, but these could be omitted or substituted to make a vegan or dairy free entree.
It was so good and I can't wait to have the leftovers for lunch tomorrow!
