I agree with taking a pasta break. Even with our simpler dietary needs here that require 3 types of pasta (gluten, gluten free, and zucchini noodles) I find what used to be the simplest meal to be one of the harders. So I rarely if ever do pasta anymore.
What about crockpot day on Sunday. You could even put the ingredients together Saturday night and just plug it in Sunday morning. That makes for an easy meal prep.
Or a salad day? You can find lots of variations on salad online.
