This is how I did mine this year.
1. Rinse seeds until all the pulp is gone.
2. Lay seeds out (I would use parchment or wax paper because mine stuck to paper towels) to dry overnight.
3. Preheat oven to 300 degrees
4. Put pumpkin seeds on a sheet pan and toss with just enough olive oil to coat and season however you wish. I used salt, pepper, granulated garlic, onion powder, and a sprinkle of hot sauce. I tossed the seeds on the sheet pan until evenly coated with oil and seasonings.
5. Put seeds in a single layer.
6. Roast for about 40 minutes and then check.
7. I ended up roasting them for 50 minutes.
