Re: How do *you* roast pumpkin seeds?
I separate as much pulp as possible and rinse a few times in a colander.
Then I let them soak in water for an hour or overnight
Boil them in salty water for ten minutes to help them cook all the way through
Drain again and pat with a towel
Spread on a roasting sheet and toss with olive oil and kosher salt.
Roast on 450 for about 45 minutes or until nice and brown, stirring several times throughout
I have a strong aversion to chewy pumpkin seeds and find this method gets them nice and crunchy and cooked all the way through
