Tonight I roasted Brussels sprouts and they were sooo good! I cut the stems off and then quartered the heads. I tossed them (including the leaves that fell off) in coconut oil, spread them in a pan, sprinkled liberally with kosher salt and some fresh Parmesan and then put them in the oven at 425 for 15 minutes. Loved them! Dh thought they were bland though so if you like to drown your food in spices
you might want to add some lemon or pepper. Try it!!
