I just saw this - I do this all the time now. Ds finds my homemade yogurt too thin, however (but less sour than the Stoneyfield Farm we started with), so I strain about half of it and mix the strained with the regular to make the right consistency. He also likes vanilla in it. We use raw honey for sweetening.

I have 2 crockpots, and my smaller one is like that - too darn hot. You could put your too-hot one on the low setting and stick a dowel or wooden spoon under the lid to keep it from getting too hot. My bigger crockpot, ironically, doesn't get hot enough so I have to put a towel over it to make it hotter.
The bigger one is the one I use for yogurt.
