CrockPot Aztec Chicken (from another forum)
6 boneless, skinless chicken breast halves
2 c. frozen corn
2 cans black beans
8 oz. salsa
4 oz. cream cheese
Instructions:
Combine black beans, corn, and half the salsa in the crockpot.
And chicken, spread remaining salsa on top
Cook approx. 3-4 hours on high, low 5-6 hours; more if using frozen chicken
Add 4oz. package of cream cheese, stirring in well, in the last hour.
Serve with rice and/or corn tortillas. You can top with cheese and sour cream.
If you omit all the dairy, it's still good.
