These turned out so tasty! Since I mixed a couple different recipes, I figure if I post it here I'll have a record of what I did.
1 lb. Ground lamb
3/4 c. Almond flour
1/3 c. Crumbled goat cheese
1/4 c. Grated onion (or minced)
1 sm. clove minced garlic
About 1 t. Cumin
About 1 t. Cinnamon
About 1-2 T. chopped fresh mint
2 eggs
Salt and pepper to taste
Mix together thoroughly and form into meatballs. Heat coconut oil in skillet over medium heat. Cook meatballs until browned on all sides and cooked through.
Served with cucumber yogurt:
About 2 c. Greek yogurt
Squeeze of lemon
Some grated onion
1 sm. Clove minced garlic
Diced cucumber
