Dairy (casein) free "yogurt" pancakes
1 egg, lightly beaten
2/3 cup soy yogurt - we like blueberry or strawberry
2/3 cup vanilla soy, almond, or rice milk
3/4 cup whole wheat flour
1/4 tsp salt, or 2 tbsp maple syrup (for a sweeter version)
Mix together all of the ingredients and cook just like regular pancakes
They're good served with fresh fruit!
