I don't advise feeding your starter w/ potato water, though. I know some people do but you increase your chance of getting mold in your starter.
Serene Allison's recipe is truly SO easy. You mix the ingredients, knead with a wooden spoon for 5 minutes (it's the consistency of oatmeal) then put it in pans for 7 hours or overnight to rise, then bake. Onlu 1 knead and only 1 rise and it never comes oit like a brick, always soft.
You need to feed your starter exclusively on rye flour for best results.
