I like to sauté onions and beans in olive oil then add cooked rice. I'm sure I add some seasonings like salt, pepper and maybe garlic, parsley, chives...whatever looks good.
Also, this is my favorite rice recipe ever and you don't need to add anything to it if you don't want. You can eat it as the main dish by itself, add some left over meat and veggies for a "stir fry" type dish. I'm sure it's lovely with beans, I just have never done it. It's BarefootBetsy's recipe.

Oh, I also make lentil taco "meat" by boiling the lentils with the taco seasoning. It only takes 15-20 minutes and even my picky kids like it.
