Dahl soup - very healing
With cold and flu season here, I'm always happy to find healing recipes, both as prevention and medicine for a sick household. I just found this soup and it sounds ideal. It's full of things we already love, and has so many healing ingredients in it.
1 medium onion, diced
4 cloves garlic, minced
1 teaspoon turmeric
1˝ teaspoon cumin
1 teaspoon fresh ginger, finely grated
2 Tablespoons vegetable oil
3 Tablespoons lemon juice
1 cup red lentils
4 cups water
1 teaspoon salt
1. Heat the oil over medium heat in a large frying pan or saucepan.
2. Sauté the onion, garlic, and spices.
3. Add the water and dried lentils and bring to a boil.
4. Reduce heat to low, cover, and simmer until lentils are tender, about 45
minutes.
5. Remove the cover, add lemon juice, and simmer over low heat, stirring frequently, about 20 more minutes (until lentils are mushy and thick).
6. Serve with rice if desired.
