You can eat some of those, give them away, compost them, etc. You don't need that many unless you have a family of 30,
Keep 1 walnut-sized grain. Put it in 2-3 cups of milk at room temp for 24 hours. Shake well a few times a day, whenever you think about it. Scoop out the grain and put it in fresh milk. Repeat daily.
The grain will grow and possibly split. You'll need to keep it at a reasonable size or else your kefir will brew in a few hours instead of 24 and could start tasting off.
Yes, room temp forever if you like. I find my kefir grains become "off" when stored in the fridge. But if you go on vacation you can rest them in the fridge.
If you want more, I recommend having 2 jars going instead of 1 big jar. Jmo.
