This is a great one for kids because you cook it in the microwave for only 90 seconds and so it's almost instant gratification for something they baked. Jacob LOVES it. Plus, they're relatively healthy, except for the chocolate chips
Pumpkin Chocolate Chip MicroMuffins - adapted from

2 1/2 tablespoons flax meal
2 tablespoons whole wheat flour
1/2 teaspoon ground cinnamon
1/2 (heaping) teaspoon baking powder
1/4 cup pumpkin puree (you could also use mashed up banana or applesauce)
2 tablespoons maple syrup (you could also use agave or honey)
Handful chocolate chips
Whisk together the dry ingredients in a small bowl. Set aside.
Whisk together the wet ingredients in a small bowl. Add them to the dry. Mix incorporated, but don't over-mix.
Stir in the chocolate chips.
Spritz a mug (I just used a standard mug, no special size) with cooking oil. Plop in the muffin mixture. And place in the microwave.
Heat on high for 90 seconds. (Don't worry, it won't explode!)
Eat in the mug or let cool for 1 minute and gently drop onto a plate. Smother with butter
