Oops, I said the wrong thing.
I'm making cheddar grits. I just buy the canister of instant grits from the grocery, make them as directed (except I use chicken bone broth instead of water) and then at the end add a little half and half and lots of sharp cheddar cheese.
Polenta is a little harder. The recipe I use for it is 3 cups chicken broth, 1 cup cornmeal, 3 TBSP butter, and 1 tsp salt. Bring chicken broth, butter and salt to a boil, whisk in cornmeal, reduce to simmer and cover, whisking often. It has to cook for quite a bit of time like 30 minutes or more. Also if you like smoother, softer polenta, you can use up to five cups of liquid. Then at the end you can stir in cheese or whatever you want. If you have leftovers, you can put them into a square dish in the fridge and then the next day cut into squares and saute in olive oil in a pan to make the outsides crispy. I don't usually have as much success with making them crispy but just stuck to the pan.
Maybe you would have better luck than I.
