The ranchero sauce you can make in a big batch also and freeze in portions.
Then come breakfast you can have vegetarian juevos rancheros. You just use beans and/or potato in place of the eggs if you think eggs might bother the baby.
Both are super easy and fast since the ingredients can be frozen then assembled. Like the beans and even the potatos.

I've never had flautas before. I am vegan so I'd avoid the meat/eggs/cheese, but there are substitutes. I'll have to look it up and see. That sounds good!
