[b]Betty's Cheesy Chicken Bake I guess this is a Betty Crocker recipe? It's been passed to me from my aunt, from someone else.
4-6 chicken breasts (thawed)
4-6 slices swiss cheese
1 can cream chicken soup
1/3 cup white cooking sherry/wine (optional)
Half of a regular sized bag herb stuffing (uncooked)
1 stick melted butter
Chicken breasts in baking dish. Salt the breasts (optional).Lay one slice cheese on each breast. Mix the soup and sherry, spread over chicken and cheese. Sprinkle stuffing over all (may need the whole bag if you use 6 large chicken breasts). Melt butter and pour over the whole thing. Bake at 350 for....i dunno, until I cut one open and it's not raw.
(I think it's about 40 - 45 minutes depending on thickness of your chicken. It's usually done if it's bubbling all around the edges.)
I like lots of gooey stuffing, so I use more than some people may. You can just sprinkle a light layer of the stuffing over the top for a little crunch and herbiness.
My mom has done the same recipe in her crock pot (she used cream of mushroom instead) on high for 4-5 hours.
I like to serve this with micro-steamed sugar snap peas or a salad, and herbed rice (one of the instant quick-cook pre-seasoned packages).
[b]Any kind of pasta/meat/sauce bake with cheese on top
I love this for leftover cooked pasta. Or fresh.
Half package of any kind of pasta, cooked.
1 jar pasta sauce (red or white) or home-made sauce
1 lb any kind of cooked meat (we use ground beef or chicken chunks....it would be good with italian sausage or ground turkey. Not sure about seafood, but it might be really good with shrimp.)
1 cup Italian blend cheese (shredded)
Layer in baking pan: pasta, sauce mixed with cooked meat, cheese. Bake for 20 min. on 350, or until cheese is melted.
These are my two quickest "real meals". I have other quickies that are more snack-y (like tuna melt quesadillas, mac-n-cheesie-weenies, blackened tilapia.)
I have found that pretty much anything I can cook without reading a recipe becomes a 30 minute or less meal (unless it involves lots of chopping/peeling.)
