Slow Cooker Hot Fudge Cake (Chocolate Lava)
I got this recipe from a friend the other day, and tried it and MUST share it! Very easy, and has the guests thinking you spent hours preparing such a decadent dessert. Fabulous served with vanilla ice cream or raspberry sherbet.
10 minutes to prep, 1 3/4 hrs to cook, Serves 4-8
1 3/4 C brown sugar, divided
1 C flour
3 Tbsp plus 1/4 cup unsweetened cocoa, divided
1 1/2 tsp baking powder
1/2 tsp salt
1/2 C milk
2 Tspn butter, melted
1/2 tsp vanilla
1 3/4 C boiling water
1. In a bowl mix together 1 C brown sugar, flour, 3 tsp cocoa, baking powder and salt.
2. Stir in milk, butter and vanilla.
3. Pour into slow cooker greased with butter.
4. In a separate bowl mix together 3/4 C brown sugar and 1/4 C cocoa. Sprinkle over batter in the slow cooker. Do not stir.
5. Pour boiling water over mixture. Do not stir.
6. Cover, Cook on high 1 1/2 to 1 3/4 hours or until toothpick comes out clean. Watch that the top doesn't burn.
My friend advised:
When I first made this I thought the bottom wasn't cooked. Then I realized that it was the fudge. It's like an upside down cake - the top is the cake and the bottom is the fudge. When you scoop out the pieces turn them over so the fudge is on top.
