Banana Oatmeal Peanut Butter Breakfast Cookies (GF & DF)
2 large ripe bananas
2 eggs
2 1/2 cups rolled oats
1 cup peanut butter or other nut/seed butter
3 Tbsp honey or equivalent sweetener
2 tsp cinnamon
Pinch of salt
Preheat oven to 350F. Grease a cookie sheet or line with parchment.
Blend eggs and bananas thoroughly, until very few lumps remain. Add remaining ingredients and blend thoroughly. Shape into 24 balls. These cookies do not spread while baking. Bake 12-15 minutes, until the edges start to brown.
