I love that the IP doubles as a slwo cooker. You many need/want to stir once or twice if you are home. Otherwise, it should be fine.
Yesterday was nuts! So, I made bbq chicken sandwiches for lunch using the IP. Since I'm avoiding wheat, I turned my portion into a bbq chicken salad with lettuce, spinach, corn, beans, cucumber and a bbq ranch dressing. YUM!
Tonight is still up in the air.
