This is yummmmy. Got it out of a slow-cooker magazine. The original calls for four drumsticks and four thighs, skin removed. I don't do bones :/, so I made it like this:
1 large onion, sliced
grated peel and juice of one orange (or a liberal sprinkling of dry orange peel and some OJ, LOL)
2 Tbsp
each Worcestershire sauce, soy sauce, and Dijon mustard
1/2 tsp minced garlic (I used freeze-dried)
4 boneless, skinless chicken breasts
1 cup dried fruit (they recommend and I used 1/2 c each of dried cranberries and snipped dried apricots)
Cover the bottom of your slow-cooker with the onion slices. Mix the orange peel, juice, W sauce, soy sauce, mustard, and garlic in a large bowl. Add the chicken and toss to coat. Dump chicken and sauce blend on top of the onion and arrange meat so it's in an even layer. Add fruit on top. Cover. Cook on low 8 hours.
I'm not a huge fan of onions, but after 8 hours they're so tender and caramelized...Mmmm. The one change I'll probably make next time I do this will be to add another 1/2 c of fruit.
