I haven't made meatloaf in YEARS (I just started eating meat after 5 years) and never really used a recipe, but here was a approximation of what I did. The good thing about meatloaf is that you can really throw whatever in it and it can work.
2 lbs organic lean ground beef
1 egg
^Edited to add about 1/2 cup milk
1 small yellow onion, diced
Maybe 1/2 cup whole wheat breadcrumbs or oats, or combo of both
3-4 cloves garlic diced
Maybe 3 tbsp ketchup
1-2 tsp dijon mustard...you could use dry mustard powder if you didn't have dijon
Salt and fresh ground black pepper
Mix it all up with your hands, and form into loaf in a roasting pan.
Then put a thin "glaze" of ketchup on top with a pastry brush and bake at 375-ish for an hour-ish
You can use BBQ sauce instead of ketchup if you want.
