I know a lot of you keep an eye out for money-saving dinners and we use this one occassionally and really enjoy it.
4 medium sized russet potatoes
2 eggs
1/4 grated onion
1 tsp garlic salt
1/2 tsp dill (or whatever seasoning you like best on potatoes)
2 tbsp flour
Vegetable oil
Peel and shred potatoes. Use a cheesecloth (or think paper towels) to sqeeze out extra moisture. Mix in all other ingredients except vegetable oil. Pour at least half an inch of vegetable oil into a deep skillet and let it get hot (at least 200 degrees). Scoop a small amount of potato mixture into the oil and press it flat, letting it fry until the bottom is light brown and crisp. Flip over and press, frying the other side. Serve latkes with applesauce on top or sour cream and chopped green onions.
Serves two adults for dinner and a picky three year old
