Default need vegan lunch recipe w/ cherry tomatoes

can anyone help.... I cannot seem to come up with anything. I have a TON of cherry tomatoes I need to use up. I can think of side type dishes, but I want something hearty.

I am thinking something with beans and pasta (or rice) also gluten free... but I've got a lot of gluten free pasta.

Default Re: need vegan lunch recipe w/ cherry tomatoes

I would just toss them in a pasta or quinoa salad. You could make a warm pasta sauce with them. Just put them on a pan with some spices and olive oil. Roast till they pop. You can do some garlic cloves, too. Toss with your favorite pasta and eat warm or cold.

My 6 year old loves tomatoes. He would just eat a whole bowl.

You could toss them with a Italian dressing and cucumber slices.

Gazpacho?
