We ended up getting burgers to celebrate report cards/end of a quarter so the pasta salad today. And smoothies. DD has been asking for smoothies so will do them with fruit, coconut milk, and chia seeds today.

Re: January Dinners
We are in the middle of repainting so tonight we are keeping it simple. Brats on brioche buns with oven fries and apple sauce.

My 17 yo and her boyfriend are cooking the family dinner tonight. They found a homemade fettucine alfredo recipe with roasted veggies.

Re: January Dinners
We had Asian lettuce wraps - seasoned ground turkey, loads of different veggies, toasted sunflower seeds, rice.

Re: January Dinners
Made sausage and cacbbage soup with half a cabbage. Now I need an idea to use the rest of the cabbage. I might try those egg rolls in a bowl that everyone keeps mentioning!

Re: January Dinners
Tonight I made 2 large lasagnes (one dairy and gluten free / the other "normal"). It makes enough for 3 meals from each type so tonight we had it with veggies. Tomorrow night when its back to work after 2 weeks off we can have it with salad and then I can freeze the last portion...Win, Win!

Re: January Dinners
We had ribs and potatoes last night. Dh wanted to smoke some and I wasn't going to say no!
We're going to an indoor water park today (don't judge ) and I really hope we have enough leftovers for dinner because I doubt I will cook! Sent from my Pixel 3a using Tapatalk

Re: January Dinners
Yesterday was curry . . . and drumroll please . . .Stuffed Green Peppers tonight (this was a dh favorite but I stopped since dd and ds don't eat bell peppers) - I went ahead and got 4 peppers. Ds and dd can dump their inside into tortillas but I felt I should at least serve them and maybe it'll entice them to try the bell peppers.
My dc have become so not picky and eat most foods including foods they used to not eat and now love . . .so I'm hopeful. Bell peppers are yummy.

Re: January Dinners
Red, yellow, abd orange taste better, IMO. Hubby really likes them too.
Last night we had homemade bbq beef and potatoes. Tonight we're having chicken and a big salad. Abd roasted peppers. Because you all inspired me. Already in my fridge.
