Yeah it’s funny looking!
I rinse mine in a mesh strainer. Then cook in vegetable broth. I made som yesterday from my meal mentor plan. It’s so good and it’s my lunch this week! It is red quinoa, edamame, carrot shreds, (suppose to have green onion and red pepper but I’m out), unsweetned coconut, chopped almonds and tossed with dressing. The dressing was pretty much the 3,2,1 dressing from The Esselstyns. I thought it sounded gross but I love it. I love my meal mentor plans. They have been getting us to eat so many more good foods. My husband and some of the kids just add meat on the side

I tried the garlic mushroom quinoa recipe last night and everyone liked it. I can't say I like quinoa as much as rice by any stretch of the imagination, but it was nice to have something different.

I'm bumping this thread because I mistakenly bought a big bag of quinoa when I already had an unopened bag in the pantry. It's the perfect time of year for trying new quinoa salads. I need to try the Mexican recipe soon.
Are there any quinoa patty recipes that are tried and true? I'm currently gluten free, and patties would be good for grab and go lunches.
