know of a good resource for kid-friendly veggie meals?
Do you know of either a cookbook or website that has great kid-friendly vegetarian meals? my kids aren't huge bean fans, aren't too picky. I'd like to move towards a less-meat based diet for our family for health and budget reasons, and need some inspiration!

Re: know of a good resource for kid-friendly veggie meals?
Molly Katzen has a few children's cookbooks that are all vegetarian. (She's the author of the Moosewood Cookbooks.) I haven't used them, but I have used and enjoyed her recipes in other cookbooks. I find kid-made meals are great to add to the repertoire.
Honest Pretzels Salad People Pretend Soup For lunch inspiration, you've got to check out the archives over at http://veganlunchbox.blogspot.com/ if you haven't seen that blog before. She's got links to a bunch of her recipes... the rest are available in a cookbook she wrote. Unfortunately, she's not doing daily blogging any more.

Re: know of a good resource for kid-friendly veggie meals?
You may want to check out Better than Peanut Butter and Jelly. I checked it out from the library, and we liked everything that we tried. Another good resource for family-friendly veg recipes is http://www.meatlessmonday.org/ They sometimes offer fish recipes though, which makes no sense, but whatever...
