Default What vegan meals are good frozen?

I'd like to double up some recipes and freeze 1 so I can easily heat things up on busy days. What kind of vegan meals freeze well? Recipes included would be great!

Also, what do you freeze them in? Pyrex dishes that you cook them in (casseroles)? Or is there something else I can use? I only own 3 9x13 casserole dishes so if I had all 3 in the freezer, I'd have nothing to cook with...Plus I only have 2 lids..maybe only 1 actually.

shephard's pie is good, and you can cook it with foil under it in the pyrex dish, then after it's cooled and frozen, just lift it out of the dish and put it in a ziploc in the freezer, freeing up your pyrex for other uses.

Grilled veg and bean enchiladas. (Grill what ever veggies you have: red bell peppers, zucchini/squash, eggplant, mushroom, onion, garlic-seasoning and black beans) Use and cheese like substance if you want, and coat in enchilada sauce, freeze until ready to bake, serve with spanish rice and chopped salad.

Ohhh good idea!! I make this shepards pie called "gardeners pie" from Fat Free Vegan, but I like to use this ground meat alternative stuff we have. So that would be perfect. And I love the foil idea!! thank you!

Great idea as well! I'm tired of our enchiladas, those sound great. And I have enchilada sauce leftover. I'll make those and freeze them up next week!

Lasagna freezes well, too, with tofu and veggies.

The tinfoil trick works well.

And subbing, because I'm doing this for post-partum and need ideas!

I make big batches of lentil and spinach curry. I think the recipe is on vegweb. I always have some in the freezer in individual portions for lunches etc.

Lentil burgers and bean burgers freeze well too for a quickie snack. I put wax paper in between them and stack them.

Veggie chilli works.

Bean burritos.

that sounds really good.
I make a basic vegetable soup and freeze it of course for us we have to add a thickening later on but it still works. We add sweet potatoes from the baby food aisle with it. sounds but heard it from a lady at work and doesnt taste bad at all.

In Scotland it was hard finding applesauce. It's just not a done thing there. So we used to buy the canned pureed apples. We'd add them to our wheetabix

Do you have recipes you really love? I can never get my bean burgers thick enough or sturdy enough to freeze. I really want some burgers and balls I can make up myself. They are so stupid expensive and they are my favorite things to eat.
