One of my kids is taking a French Cooking class in co-op and we're making some of the recipes at home. Tonight we made gratin de macaroni with gruyere and it was soooooooooo good. With roasted cauliflower. So, an overly white meal but it was good on a chilly fall day.

I made pork stew for tonight, I'm planning to make a rota and get the kids to take over a little more this week because we're all busy working on my eldest's wedding plans so time has to be managed a little more!

Tonight was lentil dahhl with Slimming World friendly onion bahjis.
Last night was pasta with lazy sauce (pan fried onion chunks, plenty of garlic, and a can of tomatoes)

It's from the IP soup bootcamp I linked upthread. Here is the link again.
Here is the recipe for just that soup: 1lb country sausage 1 cup onion 2 tbsp minced garlic 1 green bell pepper 1/2 lb carrots, diced 1/2 lb celery, diced 1 15.5oz can great northern beans 1 14.5oz can diced tomatoes w/ green pepper, celery, onion (I just used tomato sauce for this.) 2 bay leaves 2 tsp thyme 1 tbsp salt 2 tsp black pepper 3 tsp Better than Bouillon chicken 6 oz frozen spinach 3 c water Put all in the IP. Use the soup setting/30 minutes. 5-10 minute NPR. Serve. Suggested side is grilled cheese.

It just won't turn into fall here, so I'm pretending even though it's still warm out . Tonight I'm making Turkey Chili Stuffed Acorn Squash with roasted asparagus on the side.

Tonight is Mediterranean pasta and Greek salad once again. It is one of the easiest meals I know how to make and good for a relaxing day off.

Yesterday we had a lamb chili with roasted acorn squash substituted for the tomatoes (Hubby and the kids had white beans also.)... it was quite nice.
I am not sure what I am going to make tonight, I am immensely tired and can't find any mustard so I can keep to my previous plan, but I need to figure out something to use up some chicken thighs. |

I'm doing a baked potato bar tonight. Can you believe I've never made baked potatoes? I'm not the biggest potato fan, but DD2's youth leader eats with us every week and she loves them. I'm going to make Cream of Zucchini Soup and a salad on the side.

Last night I made Thai red curry, sauce and Asian veggies from TJs, with jasmine rice and sirloin steak strips.
