I sauteed a pound of boneless skinless thighs in lots of olive oil seasoned with onion powder, parsley flakes, Celtic sea salt, and pepper. Then added one can of drained green beans and one can undrained diced tomatoes. Simmered until the liquid was almost gone, then added about two cups cooked brown rice. It was a hit

I think we're going to grill salmon tonight - with yukon gold baked potatoes, and maybe roasted broccoli? or peas and salads? I can't decide.

Served with roasted broccoli over zucchini noodles. So amazing!

What's cooking in June?
Celery and peppers with chicken over rice. I had to use more chicken then usual because I'm low on veggies until Tuesday but even still I only used 2 breasts and it fed 5 with leftovers.
