I made a vegan wrap that I didn't care for but it had sunflower seed pate in it and I really loved that! It was good for a sandwich spread too!

My fave vegan sammy is hummus with coleslaw (made w/Nayonaise). Sooooo yummy salty/sweet crunchy-creamy!
My ds's fave vegan sammy when he was little was grilled avocado (I spread the bread w/Earth Balance) and veggie cheese. My dd looooves sunflower butter with fresh sliced strawberries and bananas, topped with a drizzle of honey.

My favorite is teriyaki tofu and coleslaw. I usually mix leftover teriyaki, rice, and veggies. I put that in a tortilla with coleslaw. I usually make the coleslaw with cilantro and lime. It's perfect for picnics and potlucks.

Thank you. I made a half of a sandwich this morning using lettuce and cucumber with light mayo and a bit of braggs salad dressing vinegrette. It was ok. I was in a hurry to be at work at 6 am.
I am not opposed to eggs, but probably should avoid cheese (although I like it) which is why I said vegan. I have to cut back on salt - high blood pressure - so I am looking for healthy sandwiches. I am not vegetarian and was eating smoked turkey lunchmeat sandwiches, but lunchmeat is full of sodium and other icky things. I found one good organic low salt lunchmeat at whole foods, but it is expensive so I won't be eating it a lot.

If you're not vegan and looking to reduce your sodium have you tried low sodium tuna? It's decent and adding in mayo and Mrs. Dash sesonings (like the lemon pepper) makes it super yummy

If you want something like chicken/tuna salad, we love chickpea "salad". When you smush the chickpeas, the texture is very much like tuna salad, and you prepare the rest the same (with veganaisse, of course.) It is really good.

This thread is making me crave things.
I love grilled portabella on sourdough bread with hummus, roasted red pepper, greens (arugela is yum) and a drizzle of balsamic vinegar. Mmmmm... For non vegan, I make a yummy yummy curried chicken salad that I could practically eat every day. I use canned chicken, so it's not so much prep.
