Last night we had spaghetti, asparagus from the garden, kale caesar salad. Tonight we are going to have chicken and broccoli rice.

So I ended up getting a last-minute haircut appointment plus we got behind in errands which means that I also got behind in my cooking. The corned beef is going to have to wait until tomorrow and we'll have nachos tonight.

Last night we had chicken mozzarella ravioli with a brown butter balsamic sauce, and sautéed brussels sprouts with ham.
Tonight I think I'm going to make a salsa verde chicken in the crockpot and make tostadas out of it.

Half the members my family are doing different fasts for Holy Week. Nobody is eating what I'm making, so tonight was a bit of a free-for-all - omelettes, grilled cheese, smoothies, green beans.
Tomorrow is Fishy Friday. I'm making fish and chips because I like it. I'm done caring if anybody else eats it.

Some of you serve such a nice variety of meals to your families (Charla, I'm looking at you! ). I'm not in a rut like I have been in the past, but I don't get creative very often.
Tonight was burgers and salad.

One of the ways I get variety is that I vary my proteins so I try to have each week one chicken dish, one beef dish, one fish/seafood dish, one pork or other meat dish, one meatless or pasta dish, and one soup dish on Saturday with leftovers for Sunday. Then as I build my menu for the week, I try to vary my starchy sides (not as many options being gluten free so I have to repeat during the week) and I try not to repeat a veggie in a given week. Except for Kale Caesar salad which has become my absolute all-time favorite thing in the world right now. Some weeks are better than others. For instance, last week we had ground beef three times (which is decidedly not how my diet is supposed to work). I'm also constantly keeping a look out for new recipes to pin and I might try a new recipe or two or three each week. You should see my humongous recipe binder in my kitchen. It's so full, I can barely put another recipe in there. And I went through it awhile back and threw out all of the recipes I would never make or that we didn't like.
I'm impressed with all of the meals shared on these threads. They give me such great ideas!

Last night I made Beef Plov in the IP. I didn't have whole garlic, so I just dumped in a bunch of minced from the costco jar. It was yummy and easy to take to baseball & soccer. I just put the IP in my car along with dishes and a serving spoon. Served up for dd at Kung Fu, ds and myself at baseball. Put the IP in dh's car and he served himself and our other ds at home. I love finding meals I can do that with. Another option I've found, if any one is interested is IP burrito bowls.
