Default Simple Whole Wheat Bread

My favorite wheat bread.

It makes three loaves and I only have one bread pan in the right size, so I make one in a loaf pan, one round loaf and one braided loaf. I bake the braided loaf for abouta 22-25 minutes instead of 30 minutes.

Default Chocolate Chip Banana Muffins

I make these as mini-muffins and the only problems is that they're so easy to unwrap and pop into my mouth. I eat way more than I would if they were regular sized, but they are oh-so-good!

These are the scones I swear by -- my MIL gave me the recipe and I can't say enough about how easy and yummy they are. I've been making them for years and everyone raves about them!

Fruit Scones

4 cups all-purpose flour (I use 2 cups white flour and 2 cups whole wheat flour)
1 cup sugar
½ tsp salt
4 tsp baking powder
1 ½ cups dark raisins (or ½ cup currants or dried blueberries, and ½ cup dried cranberries)
2 sticks butter
2 eggs
1 cup half-and-half

Whisk together flour, sugar, salt, and baking powder in a bowl. Gradually mix in raisins (other dried fruit) so they are evenly distributed. Add butter in small cubes and mix with a pastry blender (actually, I just use my KitchenAid mixer on Stir and it works fine).

Whisk together eggs and half-and-half in small bowl. Gradually stir into flour mixture until dough forms. Do not overwork.

Drop scant half-cup amounts (I actually use about ¼ cup) of dough onto ungreased baking sheet. Lightly brush each scone with egg wash if desired (I don’t do this). Bake in 350 degree oven for 20-23 minutes. Makes 18-20 scones.

Flour Tortillas II

1/8 cup butter or margarine
1/8 c oil
3/4 c warm water
1 tsp salt
2 cups flour (any type)

Mix all ingredients. Form into 8 balls. Let sit in refrigerator at least 30 min for easiest rolling.
Roll each ball into flat round (as round as you can get it, LOL, but don't stress over it! They are good oval, rectangular, ameoba, whatever!)
Place each one on hot griddle. When bubbles start to appear, flip and cook until it bubbles again.
Serve hot!

I don't know if this is the best place for this, couldn't figure out where else to stick this.

I just tried a granola bar recipe that I give a from allrecipes.com...

It's called "playgroup granola bars"... oh, and when they say cut it after 5 minutes, definitely do that!!! And I REALLY greased the pan, it definitely is important too. Also, I used a glass baking dish and they were ready in 20 minutes, not 30. I like this recipe b/c it actually stays together as bars... I did put raisins in it, but I think that dried cherries or other fruits would also be good in it! Make sure you mix the dry ingredients before adding the wet, though... I added the honey before I mixed the dry and the salt & stuff didn't get distrubuted well. But they still turned out great!

Thanks for the granola bar recipe! I made it tonight and my boys love it! I cut back on the salt cause we're watching our blood pressure, threw in a handful of sunflower seeds, used half dates/half raisins, and used Canola oil in place of the veg. oil since we have soy allergies... also greased the pan with Canola oil. They are super yummy!

My 3yo was eating it enthuesiastically, and then he got this strange, concerned expression on his face... "are you sure.. ?" he started off in a very small voice.... [I thought I knew where he was going, but I waited...] "Mommy, are you sure there are no nuts in here?" He's very much allergic. I assured him and told him I made it myself. He wanted to know what WAS in them so I listed all the ingredients for him and then he seemed satisfied. Next time I'll let him help make them so he can see for himself.

I found this bread recipe about 2 weeks ago and made last weeks bread with it, while the bread is more crumy than my other bread recipe, it's so much easier to make that it's worth it. I modified it removing stuff we cannot/do not want to eat to make it my own.

You'll Need:

4 cups warm water
1/3 cup sugar or 1/3 cup honey
3 packets of yeast
1 tablespoon salt
1/3 cup oil plus extra oil to coat bowl
10-12 cups of flour of your choice but I'd stay clear of those with baking powder added (I made this with half and half bread flour and whole grain but used AP to kneed when I ran out.) Since flour settles and 1 cup can me more than a cup because of it, I sift my flour twice before I measure the cups since I don't weigh it.

* Mix water & honey in bowl. Add yeast. Let sit for 3-5 minutes. Add salt, oil and flour. Works best if you add slowly so you don't put too much flour in. Mix until it becomes a sticky ball, kneed adding flour as you go until it becomes one big hardly sticky ball. Need for ten minutes after that. Coat dough in oil, place in big bowl covered with damp teatowel in a warm place(I sit it on top of my oven, which is set to preheat) and allow to rise until it at least doubles in volume. Punch down, form into four loaves, put into pans(I put two in each 11x13 cake pan) and allow to rise again for 30 minutes. score top with knife before putting in oven at 350 for 40 minutes.

I found this best with butter and raspberry jam.

Awesome and very very YUMMY!!!!

WHOLE WHEAT BANANA AND PINEAPPLE BREAD

3 c. sifted whole wheat stoneground flour
1 1/4 c. sugar
3 beaten eggs
1 1/4 c. vegetable oil
1 tsp. soda
1 tsp. salt
1 tsp. cinnamon
3 lg. mashed bananas
8 oz. can crushed pineapple, drained
2 tsp. vanilla

Combine all dry ingredients except sugar and set aside. Mix sugar, oil, eggs, bananas and pineapple. Stir in vanilla and stir into dry ingredients until well mixed. (Do not use mixer.) Pour into 2 greased and floured 9 x 5 x 3 inch pans. Bake at 325 degrees for 90 minutes or until a knife comes out clean. This bread freezes well.

I'm not even sure who sent this to me, but its yummy!

Morning Glory Muffins

2 cups flour
1 cup sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
2 cups grated carrot
1 cup of apples, peeled, cored, and grated
1/2 cup raisins
1/2 cup chopped walnuts
1/2 cup shredded coconut
3 eggs
2/3 cup melted butter
2 teaspoons vanilla

Directions:

In a large bowl, mix flour, sugar, baking soda, cinnamon and salt. Stir in carrots, apple, raisins, walnuts and coconut.

In another bowl, beat eggs. Stir in melted butter and vanilla. Pour over the dry ingredients and stir just until moistened.

Spoon batter into greased or paper lined muffin tins. Bake at 350 degrees F. for 20 to 25 minutes.

Cranberry-Orange Bread (or muffins)

Preheat oven to 350F. Grease and flour the bottom of a standard loaf pan.

Combine in a large bowl:
2 cups flour
1 cup old-fashioned oats
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

In another bowl, beat together until thoroughly mixed:
3/4 cup orange juice
2 eggs
1/3 cup vegetable oil
1 tablespoon orange zest

Add wet ingredients to the dry mixture, mixing until just moistened. Stir in:

3/4 cup halved fresh/frozen cranberries
1/2 cup chopped nuts (optional)

Pour into loaf pan and bake 60-70 minutes (until done) Cool in the pan about 10 minutes and then on a wire rack. Also makes great muffins!
