I think I'm going to make a chicken and veggie stir-fry. But I'm out of rice and don't have time to run to the store. I prefer having my stir fry over shredded cabbage, but the kids are a little picky, so I might make quinoa for them. Maybe I can scare up some brown rice. They might eat that.

I'm crashing hot potatoes! With hamburgers and fresh green beans. My dd made a cheesecake for dessert. I've never made one, so she just searched for a recipe, requested a few things from the store, and did it on her own!

It's a Belarusian thing, possibly why you haven't heard of it, but I grew up in Belarus and it's something my mother taught me to make. I don't have her exact recipe written down, but I looked online and this one's fairly close:

One note: I smash them with a fork, NOT a potato masher. The potato masher just sticks and did not work AT ALL for me
Yep, I googled (the AMAZING power of google!!!) and found that recipe too! Made it tonight since I Had leftover baked potatoes in the fridge. Super easy and delicious!

That onion/dill combination of spices sounds amazing! I will try it next time.

Oh yes, I used a fork too. I'm a minimalist wanna be so I've already eliminated all kitchen gadgets that aren't used regularly. So I'm glad to hear that others do this and actually prefer it!
