Knitlove I am ordering pomegranate molasses in Amazon right now so I can try this!! I actually have a container of toasted walnuts I need to use up so this is perfect and looks amazing.

It is amazing! We will eat it almost every week from November untill I can no longer find freash pomigranits in early February. I will also freeze some pomigranits and we will have one last large batch of it in March.

Okay, so I saw the pomegranate juice on sale at the regular grocery store (POM brand), so I swooped it up.

I didn't bother to make syrup. Just saw that 32 oz of juice makes 1 cup of syrup.

So I put sauted the onion in oil in the IP while the pecans (first bag I pulled out of fridge) baked for 5 minutes at 350.

I cut up a large butternut squash.

Put 32 oz of pom juice into the IP along with the cooked onions. Added the squash. Turned it on saute, to heat the juice while I prepped the thighs (cutting off the fat, nothing else).

Crushed the pecans in my Vitamix.

Added spices to the IP....cinnamon, cloves, ginger, turmeric, pepper, about 1/4-1/2 tsp of each. Then added the nuts.

Added 3 lbs of thighs to ensure many leftovers. But too many! lol We will have to eat it for lunch every day this week!

Set IP to 10 minutes. Quick release. Chicken was WAY over 160. Will do less time next time!

So entire thing, from start to finish, was half hour or so......

I will watch for sales/clearance on that juice. Zero way am I cutting that fruit and then making syrup.

Hubby and I really liked it. Kids ate it, which is enough for me. I also made coconut rice (1 can coconut milk, 2 cups water, 2 cups jasmine rice. Whatever the package said for rice/water ratio. Very good.

Is it better your way? Probably. But it's good enough this way!

I can always find pomigranit molasis in the international section of my groshry store, it is in the Israeli/ Indian section. But that may be because of my location. I know my brother in Texas had to look a bit harder to find it.

I saw that Asian grocery stores sell it for cheap too. I'll take a look. I do want to try it the real way. of course, I also saw that you have to leave it overnight for it to be authentic...something about the walnut oil.

There is no way we could leave it over night. My girls would wake up and eat it cold.

They had pomegranates at the store today so I picked up a bag of walnuts and I am planning on making this on Saturday, when it cools off here.

We like Garlic-Lime chicken made with thighs. It's from Saving Dinner

Garlic Lime Chicken
Serves 6

"Oh that Garlic Lime Chicken --- I think I could serve that a couple
of times a week and my husband and kids would be thrilled! I love my
Menu-Mailer!!!" ~Kate


3/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/8 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon thyme
1/4 teaspoon dried parsley
6 each boneless skinless chicken breast
2 tablespoons butter
1 tablespoon olive oil
2 teaspoons garlic powder
3 tablespoons lime juice

In a small bowl, mix together all seasonings, except the last
measurement of garlic powder and lime juice.

Dredge chicken breasts in seasoning mix on both sides.

Heat butter and oil in a large skillet over medium heat and saute
chicken until golden brown, about six minutes on each side. Sprinkle
with remaining garlic powder and lime juice and cook 5 minutes
stirring frequently to coat evenly with the sauce. Serve.

Per Serving: 320 Calories; 9g Fat (26.4% calories from fat); 55g
Protein; 2g Carbohydrate; trace Dietary Fiber; 147mg Cholesterol;
460mg Sodium. Exchanges: 0 Grain(Starch); 7 1/2 Lean Meat; 0 Fruit;
1 Fat.

SERVING SUGGESTION: Serve with baked sweet potatoes, steamed broccoli
and baked potatoes.

VEGETARIANS: Use the same spices and prepare veggie patties in the
same way.Cooking time will be less, but the results will be delicious!
