RAW food HELP!! I need a chocolate syrup recipe! and ice cream recipes!

OK, so I'm back on the wagon, day three and I'm not going to make it unless I eat ice cream. I've been having MAJOR cravings. Right now we have nothing in the house, so I've been eating chocolate soy ice cream, but when we go shopping next Tuesday I can buy stuff to make raw ice cream. I've made chocolate raspberry sorbet and sprinkled cacao nibs on top...MMMM, delish. But now I'm left w/the soy dream. ANyway, I LOVE me some peanut butter. I have a serious PB obsession, so I've been mixing the PB with the chocolate ice cream and it's absolutely divine. But what I REALLY want is some vanilla "ice cream" with some chocolate syrup. I know awhile ago someone posted a recipe for chocolate sauce. SOmething you could use to dip strawberries in or use as icing or whatever. I think it was made with coconut oil. So...anyone have that recipe? ANd a good recipe for vanilla ice cream/sorbet? Oh man, I'm thinking chocolate dipped banans in vanilla ice cream. Man, who knew raw could be so delicious!

hmmm, I'm treading lightly here since I'm not up on what RAW means (and specifically your case, are you raw as in only the temp requirements? Do you not eat dairy/eggs?) Reason I'm asking is that the Ben & Jerry's recipe for ice cream I make at home uses raw eggs and cream, plus sugar (then adds the flavorings) so technically it's raw of course using a sub for the sweetener. And it's delicious.

absolutely no dairy or eggs. We don't even allow them in the house b/c of DS's severe allergies. I mean all raw vegan ingredients. I would use almond milk to make some ice-cream type thing, but I don't have any right now. Thus the soy.

You have an ice cream maker right (or I remember the vitamix)? Coconut milk makes an excellent ice cream (it's one of hubby's favorite flavors) and would go well diluted with the almond milk when you get some more. A little bit of sweetener and you're good to go.

I was wondering about coconut milk. I'm having a really hard time finding young coconuts though. I have canned, but that's not the same. It would work in a pinch though. ANd I have a vitamix, but it's as good as an ice cream maker.

Doh that's right would the canned coconut milk not work as far as being pasteurized? I end up using the canned but prefer the thai coconut milk as I find it to be super rich.

Marielle - Yeah, I'd prefer nothing pasteurized, but I can't seem to find anything else.

All my recipes say to buy young coconuts, but I have never seen one, nor do I know where to get them.

Asian Markets, maybe? I don't know of any around here. I've checked three local HFSs and regular supermarkets too, but all I find are the old nasty coconuts with no flavor and sometimes rotten milk.

I'm also trying to find (non-raw) canned coconut cream without added sugar. All I can find is the kind in the ethnic section of Walmart or the alcohol section, but it all has sugar in it (and propylene glycol

)

well the liquid in the coconuts (event he green ones) is the coconut water not milk. The milk is made by grating the coconut meat (not green coconuts) and then pressing it to get the milk. I've made it a couple of times as a kid, pretty labor intensive.

As far as the canned stuff - the Coco Lopez stuff is coconut cream and loaded with sugar, etc. for making pina coladas and other drinks. I've had luck finding coconut milk at our walmart in the ethnic aisle where the asian cooking supplies are. There's usually two brands although one mentions it being the first pressing.

MommyCrat that sounds yummy. I've heard pureed banana having very much an ice cream like texture on its own. When I visited my grandma in the summers she made chocolate ice cream just by stirring the freezing mix every 20 minutes or so - pretty lo tech.
