Add cheese, egg and pepper, and mix well. Put 1/4 of the spinach mixture in center of each chicken breast. Roll up to enclose spinach mixture. Tie into shape with kitchen string. Dip chicken breasts in melted butter and roll in stuffing to coat. Put into greased baking dish and bake until juices run clear and crumbs are crisp, about 30 minutes. Remove string before serving

Lemony- Cereal coated chicken

1/2 C wheatena cereal
1/4 C oatbran cereal
2 T chopped parsley
1 T coarsely grated lemon peel
1/2 t. paprika
2 egg whites
1T water
1 2.5 lb chicken quartered and skinned
lemon slices for garnish (optional)

Mix cereals, parsley, lemon and paprika. Beat egg whites until foamy. Dip chicken in egg whites, roll in cereal, and press firmly to coat. Place chicken in lightly oiled baking dish. Bake in preheated 375 oven 45 minutes, turning once, or until chicken is fork-tender and coating well browned. Garnish with lemon slices.

Chicken Broccoli and Sour Cream (this is gooood)

2 heads of broccoli
1/2 C grated parmesan cheese and 1 C grated cheddar

Chicken in Yogurt Surprise!

3 lbs chicken cut into serving pieces
1.5 C plain yogurt
1 lg sweet red bell pepper, grated
2 T minced garlic
1 T paprika

Prick chicken with fork, beat yogurt and add remaining ingredients. Pour 3/4 over chicken in a covered dish and marinate overnight. Remove chicken from marinade and cook on medium heat until just a tablespoon of marinade remains in the pan. Add remaining marinade and spread over chicken-serve hot.

Okay, I've been reading this thread and ...a lot of these recipes take me right back to the potluck dinners of my childhood!

So, I want to play...how about something with some Latin flair but not too spicy (and no, Doritos and/or Rotel don't count ).

ETA: The stuffed chicken breasts sound good!

Oven Chicken Santa Fe

1 can pineapple chunks
2 chicken breasts, split
1 T olive oil
1 t ground cumin
1 t ground oregano
2 garlic cloves pressed
1 lg onion chopped
1 c uncooked rice
1 can whole tomatoes chopped
1 can enchilada sauce
1 C raisins
1/2 c water
1 C whole almonds, toasted
1 green bell pepper seeded and chopped

Drain pineapple and reserve juice. Brown chicken in oil. Sprinkle with cumin and oregano, add garlic and onion. Saute. Add rice, reserved juice, undrained tomatoes, enchilada sauce, raisins and water to a 3 qt. casserole. Add chicken and sauteed vegetables, scraping all drippings into casserole. Cover and bake in 375 oven for 30 min. Remove from oven and stir in pineapple, bell pepper, and almonds. Cover and let stand for 10 minutes.

ETA: How did I miss Enchiladas Aztecas? I might try that recipe first.

Nah. How about a standard

Arroz con Pollo


1 chicken, cut up
1/2 t oregano
2 cloves of garlic, chopped
2 tomatoes, 1 green pepper, and 1 onion, chiopped
1 c rice
2 c chicken broth
1 jalapeno, diced

Mix garlic and oregano and rub chicken well. Saute tomatoes, peppers and onions in butter. Add chicken and rice and mix well. Add liquid, stir and cook over low heat until all the liquid is absorbed. Then cover until rice is tender.

That's perfect! I had a rice-cooker recipe for Arroz con pollo but I lost it. I'll have to try this one. I may tinker with it a bit--double everything but the chicken and the pepper, add peas. Thanks!

Chicken in Yogurt Surprise sounds tasty and looks easy, but is, ummm... how shall I say this... it contains dairy. I've yet to find an acceptable yogurt sub, sadly.

But, the bigger problem is that we are dairy-free as well.
