Grilled salmon with homemade pesto, salads, and these amazing Parmesan roasted baby potatoes from a recipe a friend shared recently. They were pretty easy and a huge hit with my whole fam. Bonus, I found the bag of baby potatoes at Aldi.

I roasted pork chops in my big toaster oven tonight. Served with leftover rice and steamed cauliflower. The chops were surprisingly good and cooked very quickly.

My kids like Al Fresco sausages, too. We had the roasted garlic ones tonight with peppers, onions, and peas. I made a pot of vegetarian collard greens, but the kids turned their noses up at them. Hah! More for me!

We like the Adele's chicken apple sausage. I haven't tried the Aldi version but I will look for it the next time I go!
And I REALLY want to try those potatoes.
