Matzoh ball soup is my favorite comfort food. I also love minestrone or ribollita (the recipe I use is from Vegan Planet), lentil soup (this is the best one I've ever made, but I've only made it 2-3 times. I have to make it again soon...), split pea is great. I love soup because I can use whatever veggies I have on hand for a "Vegetable Soup"... if I don't have potato I usually add quinoa or pasta to make it a meal.

I also love creamy soups and get them when we go out. The area I live in now tends to serve cream based soups more often at restaurants. Cream of broccoli or potato is so

My step-mom makes a lot of really good veggie bean soups. She uses a lot of cilantro and lime flavors

Oh my Italian family also makes a simple broth (probably chicken) with just tortellini in it. Another variation has a couple of rice balls floating in the broth instead. My family's recipe isn't breaded like this one, it is kind of just eggs, rice and cheese formed into a ball and fried till crunchy Not healthy at all but so comforting.

A few more and then I need to make myself quit. Did I mention that I LOVE soup?!

Black Bean Soup

2 cans black beans, undrained
1 can chicken or veggie broth
1-2 tsp salt (to taste)
1/2 tsp pepper
1/2 tsp granulated garlic
1/2 tsp granulated onion
1/2 tsp chili powder
1/2 tsp cumin
1 small bunch of cilantro, chopped
Juice of two limes

Combine all in a pan and heat through. Double it if you want a big pot. If you want it thinner, add more broth. If you want it thicker, leave out some or all of the broth.



Lentil Soup
Here's a lentil soup recipe that I like. I've eaten it just like the recipe or I've added 1 lb of browned ground beef for even more heartiness. http://www.foodnetwork.com/recipes/g...ipe/index.html

I've made potato soup & pumpkin soup & they are both soooooo delicious, when homemade. I also love a good loaded potato-cheese soup, but I probably won't ever make that myself.

I detest all soups. Stews are questionable and are likely not to be touched but all soups are YUCK imo. Especially anything creamy or cheesy or thick.

My family doesn't like soups, except for one: Tortellini soup.
I like it, too, but being low-carb I don't eat it. I love cream based soups, but don't know how to make them from scratch.

Tortellini Soup

Bring 12 c water or broth to a boil
While waiting for the water to boil, put 11 boullion cubes in water (skip if using broth). Also slice carrots (I like to use baby carrots because they're smaller in diameter.).
Dice several celery stalks. Put all veges into water while waiting for it to boil, so the carrots have time to cook.
When the water is boiling, put one full bag of frozen tortellinis in (I think the bags are 12-16 oz). Boil for about 20 minutes, checking tortellini for doneness. To check the tortellini, take one out and cut in half. If the dough is still white, it's not done.
In the last 5-10 minutes put some parsley in.
Serve with grated Parmesan cheese.

I LOVE soup! Lovin' all these recipes!

I love cream soups the best - creamy potato, creamy chicken rice, tomato cream, broccoli cheese, etc. I also really like French onion soup and Italian bean soup. I pretty much like very kind of soup, except for pea soup and clam chowder and soup with mushrooms in it.

This is a terrible thread to stumble across when you are hungry and needed to buy groceries two days ago.

I am afraid of lentils these days, since for me they seem to trigger gallbladder attacks. BUT I used to make a delicious lentil stew with just lentils and your usual soup veggies, thickened with a bit of flour and butter. Sooo good.

Chciken stew or soup, Italian Wedding, Hamburger Soup (which I no longer make because of the msg iin my recipe), Barley Beef with mushrooms, Veggie Chili, White Chili...

Okay. Shopping. Tomorrow. Stat.

Oh! Last winter, I made alot of veggie broth. If I used edible bits only, when it was alldone I would spoon out the mushy veggies, puree them, add some crisp ones to cook just until done, then add the puree back in with a can of evaporated milk, salt, and pepper. So easy. So. Ridiculously. Good.

Come summer, I'm nearly vegan. Let soup weather hit, and... rawr.
